Pork with Carrots, Potatoes and Green Peas (Ginamay)

Here's another family's favorite recipe that we love especially the kids - Pork with Carrots, Potatoes and Green Peas. We call this Ginamay in Cebu, Philippines. Ginamay means "little" from the word "ginagmay". Mainly because everything is chopped in smaller sizes.  For a dose of healthy meal for my kids, I cook this dish. Our picky-eater little boy love it.



Ginamay
Pork with Carrots, Potatoes and Green Peas

Ingredients:
2 tbsp cooking oil
1 tbsp minced garlic
1 small onion
1/2 kg sliced pork belly
1 cup carrots, diced
1 1/2 cup potatoes, diced
1/2 green peas (guisantes)
2tbsp red bell pepper, julienne cut
3 cups water
2 beef broth cubes
2 tbsp soy sauce (optional)

Cornstarch mixture:
1 tbsp cornstarch
5 tbsp water

Instructions:
1. Saute garlic and onion.
2. Add pork. Cook until light brown. You may add soy sauce for added taste and color (optional).
3. Add carrots and cook for 2 mins.
4. Add water and let it boil.
5. Add potatoes. 
6. Add beef broth cubes and simmer for 5 mins.
6. Add red bell pepper. cook for another 1 min.
7. Press some cooked potatoes (optional) 
8. Add green peas, cook for another 2 mins
9. Add cornstarch mixture. Simmer for 1 min. Adjust taste.
10. Serve with hot rice.

Very easy and lovely dish. You can always add some small shrimps or sausage if you like. Try this for your little ones and let us know in the comments how it turned out.

How to Cook Tortang Giniling - Filipino Food

Hi everyone! How to Cook Tortang Giniling is coming right up.


Tortang Giniling is a comfort food for us Filipinos. It is a very simple dish and is commonly sold at karenderia (small eatery). The main ingredient is ground pork that is cooked first before adding eggs then fried once again. The tricky part of this dish is how to make it a perfect circle tortang giniling. TORTANG GINILING
Good for 3-4 persons
Ingredients:
2 tbsp cooking oil for sauteeing, add 6 tbsp for frying
1 tbsp minced garlic
1 tbsp minced onion
1/4 kg ground pork
3 eggs
1 1/2 tsp magic sarap seasoning or your favorite seasoning

Instructions:

1. In medium heat, saute garlic first and then after a minute add minced onion.
2. once onion is translucent, add ground pork.
3. Cook until light brown about 5-10 mins.
4. Remove from pan. Transfer to a bowl. Let it cool for about 3-5 mins. You can definitely use a fan to cool it faster.
5. Add eggs, mix then season. Taste it if its according to your liking.
6. Using the same pan, add cooking oil for frying the mixture.
7. Add mixture and fry until bottom turns golden brown.
8. Remove oil and save it for later. Using a large round plate, put it on top of the pan and flip it quickly. The plate should be bigger than your pan.Watch my video how I did mine.
9. Put back the used oil, then slowly put back the tortang giniling.
10. Continue frying until bottom turns golden brown.
11. Repeat the same process. Remove oil from the pan. The less oil the easier to remove the tortang giniling. Put large round plate on top of the pan and flip as quick as you could. Watch the video if you are unsure how to do this.
12. Transfer to a clean plate by putting another clean round plate on top and flip. Serve and enjoy together with hot rice.

Bam-i Pancit Bisaya Egg Noodles and Glass Vermicelli

Bam-i is a noodle dish. From what I read online, it originated in Cebu, my hometown. It is consist of egg noodles (canton), glass vermicelli (sotanghon), meat and vegetables. There are various ways to cook Bam-i. Some would go all out with the ingredients, others would just go as simple as putting few pieces of meat and vegetables. Majority of Karenderia (small eatery) in Cebu are selling Bam-i. Don't expect too much though, the Bam-i from these eatery are very simple and are sold cheap. You can buy it at P5.00 or P10.00 depending on how much ingredients they put in.

Cebuanos love Bam-i. In special occasions like birthdays, anniversaries, fiestas, it is almost always present.

Bam-i (Egg Noodles and Sotanghon Glass Vermicelli

So my recipe is somewhat in the middle, I think. Not so sophisticated nor too simple.  Here it is...

Ingredients:
1/4 kg pork belly, sliced
1 beef cube
2 tbsp oyster sauce
1 cup carrots
1/4 cup red bell pepper
2 cups chinese pechay
1 tbsp minced garlic
2 tbsp cooking oil
1 medium size onion
2 rolls Sotanghon (glass vermicelli)
1/8 kg Egg Noodles or about 2 1/2 cups (you can always add more)
2 cups water
2 tbsp soy sauce

Instructions:
1. Saute garlic and onion.
2. Add pork and saute until light brown.
3. Add soy sauce and cook for another 3 mins.
4. Add water. Let it boil for 5 mins.
5. Add carrots and cook for another 2 mins.
6. Add beef broth cube and mix.
7. Add red bell pepper.
8. Add more water if necessary. I added 3/4 cup of water.
9. Add egg noodles.
10. Combine and cook for 2 mins.
11. Add sotanghon.
12.  Combine and cook for 2 mins.
13. Season with oyster sauce.
14. Add chinese pechay
15. Add black pepper
16. Serve hot and enjoy!

Garlic Vinegar Pork - Filipino food

Hi Friends,

Here's another favorite simple dish that I learned from my Mama - Garlic Vinegar Pork. I just gave that name to this dish. Obviously, the main ingredient is pork. This can be an appetizer or main dish.
I love this even more when dip in hot spicy vinegar paired with hot rice.



Ingredients:
1/2 kg pork belly, sliced
3/4 cup white vinegar
2 tsp salt
1/4 tsp black pepper
1/4 tsp umami seasoning
2 tbsp minced garlic
1/4 cup water

Instruction:
1. Combine all ingredients.
2. Cook in medium heat, let it boil until mixture evaporates with stirring every 2 minutes.
3. Keep frying until golden brown
4. Serve with spicy vinegar and hot rice
5. Enjoy.
